What is overnight oats?
Overnight oats are simply rolled oat soaked in liquid then chilled in the refrigerator overnight. The oats will soak up any liquid like a dry sponge and basically “cook” the oats to create oatmeal without needing to actually cook the oats. Overnight oats are perfect for busy lives, an ideal grab-n-go breakfast on the way to the office, or even a lunch box snack idea. Typically you will find all recipes are in a mason jar- I believe this is for visual purposes. I mean, who doesn’t love to eat pretty?
My staple flavor
The best part about overnight oats is you can easily change the flavor of your oats with a swap of spices, ingredients, and liquid of choice. In this overnight oat recipe we use Kefir. I love coffee flavored anything so this combination of coffee, kefir and coconut won my heart. The Kefir
As you know, I have a love affair with kefir. Any flavor, strawberry is probably my most favorite, is my smoothie jam in the summers and plain kefir or vanilla flavored kefir for the winters. I enjoy plain flavor because there is so much versatility with just one flavor, you have so many options to create and multiple uses for it. When I can find it, honey coconut kefir flavor hits the spot. You can view that recipe on Instagram, the mother of all recipes! I would include the honey coconut kefir or vanilla flavored kefir for the plain or this recipe if you can find it, however by adding in vanilla bean, honey and coconut you basically are devouring the same flavors just with different kefir flavors.

Espresso Overnight Oats with Kefir
Ingredients
- 1 cup rolled oats
- 1/4 cup Lifeway Kefir, plain flavor or vanilla flavored
- 2/3 cup milk, any
- 2 tablespoons brown sugar, dark or light
- 2 tablespoons cup honey
- 1 teaspoon espresso powder
- Dash of cinnamon, optional
- Shredded coconut
- Mini chocolate chips
Directions
- In a large mason jar or air tight container, add rolled oats, Lifeway Kefir, milk, sugar, honey, espresso powder, and cinnamon if using. Stir to combine.
- Add in your coconut and chocolate chip, fold in carefully.
- Screw on your cap or seal with your plastic lid. Place in the refrigerator over night or for 12 hours.
- Enjoy chilled or add to a microwave safe bowl and heat for your pleasure.
