Quick Tortellini Pasta Soup

Weeknight tortellini pasta soup features a robust Italian flavored base starting with the sauce ingredients using chicken stock, tomato sauce, and simple Italian seasoning. This soup includes the meat of your choice and stuffed tortellini pasta sprinkled with chopped basil and freshly grated parmesan cheese.

The sauce

Tomato sauce and chicken stock are your two liquids in this sauce. One can of tomato puree and one box of chicken stock will act as your base broth. Oddly enough, I opened heavy whipping cream to add into the sauce ingredient but completely forgot about it! I wanted this soup to be more of a creamy consistency rather a pure tomato base, my lack of attention created one of my favorite tomato base soups without the addition of the heavy cream. You can add heavy cream if you like, however, it doesn’t need it at all.

Sauce tips

For this recipe I used one pound of tortellini. For the 20-ounce family size package, add in about 1-2 cups more chicken broth because the pasta will continue to soak up the broth as it cooks.

The meat

First, you don’t have to add meat to this at all! You can skip the first step and add a little olive oil to the bottom of your pan to sauté your onions until they are translucent then continue to follow the directions. Your meat choice in this quick tortellini soup depends on what you like. For my mom, I use lean ground meats like chicken or turkey but for myself I enjoy ground Italian sausage from the Whole Food Market butchers. Sometimes I will make mini meatballs instead of chopping up the ground meat. Fish is a great alternative as well in this tortellini soup.

Easy Tortellini Pasta Soup

Ingredients

  • 1 pound ground chicken (or Italian sausage, turkey, beef)
  • 2 tablespoons flour, optional
  • 1/3 cup sweet yellow onion, diced
  • 1 teaspoon garlic, minced
  • 1 14-ounce can tomato sauce
  • 4 cups chicken stock
  • 2 teaspoon Italian seasoning
  • 1 package tortellini pasta (9oz-12oz)
  • Basil for garnish
  • Parmesan cheese for topping, optional

Directions

  1. In a large stock pot over medium high heat, cook your meat. Loosely break up the meat but keep some good size chunks in there.
  2. Add flour to help brown the meat. This step is optional, you can completely skip.
  3. Toss in onions, sauté for 1 minute then add your garlic. Sauté until fragrant, about 30 seconds.
  4. Pour in your tomato sauce and chicken stock. Bring to a boil then reduce to a simmer for 8-10 minutes.
  5. Add pasta and Italian seasoning, cover for 7-9 minutes or until pasta is cooked through.
  6. Garnish with chopped basil, enjoy warm.
