Modification, use only 1 pack of sardines. So, for all sneaky parents out there, this is the recipe for you to hide sardines from your children but know they are still eating one of the healthiest fish on this planet!

This recipe can be made with homemade mashed potatoes or instant. I use the instant packet of baby reds, you can use whatever packed you want. I feel if I only need a cup of potatoes then the instant packet is the best action to take. Less time and you just need to stir the packet in with a fork then chill. Took me 5 minutes this morning and the potatoes were cool by the time it was lunch. I whipped these right up with mushrooms and shallots in a garlic butter sauce. Satisfying!
Now, the mushrooms you pick can be very earthy. I love savory flavors and I also love garlic, go big on the garlic and add extra butter. You can use whole or sliced mushrooms here, the cooking technique is the same.

Sardine Potato Croquettes
Ingredients
For the croquettes:
- 2-3 cans sardines in olive oil
- 2 tablespoons vegetable oil, for frying
- 1 cup mashed potatoes, chilled
- 2 tablespoons bread crumbs
- 1 egg, beaten
- Dash of dried sage
- Pinch of dried thyme
- Pinch of black pepper
- sea salt for garnish
For the mushrooms and shallots
- 2 cups mushrooms, whole or slices, washed and pat dry
- 1 shallot, julienne lengthwise
- 2 tablespoons olive oil
- 3 tablespoons butter
- 2 tablespoons garlic
- Pinch rosemary
- Pinch of Italian seasoning
Directions
- In a large mixing bowl, mix together with a fork sardines, potatoes, bread crumbs, egg, sage, thyme, and black pepper together. Place in the refrigerator for 10 minutes.
- In a large skillet of medium high heat, add vegetable oil. Wait until the oil is heated then scoop out about 2 tablespoons of mixture and dollop in the frying pan. Try not to over crowd the pan, I cook 6 at a time. Cook one side for 2-3 minutes each side then place on a napkin to drain the excess oil, immediately sprinkle on light sea salt. Repeat for batch 2.
- Using the same pan, or a new pan, add olive oil over medium heat. Add your mushrooms, butter, garlic, rosemary, and seasoning. Sautee for about 3 minutes until mushrooms start to soften just slightly. Move the mushrooms to the center or the pan and place sliced shallots on top. Cook covered for 1-2 minutes then sauté for an extra 1-2 minutes. This helps steam the shallots first before caramelizing.
- Place croquettes in a serving bowl, add your mushrooms with any extra garlic butter sauce.
- Store left over in air tight container. To re-heat, heat in microwave and then toss in a hot skillet to get an extra crisp on the outsides.
