I LIVE for brownies! This little mug is how I practice portion control but hard to resist making a second batch because it is SO easy to make….
Loaded with fudgy chocolate and gooey chocolate chips finished with a salty touch just enough to wake up the taste buds to enjoy the depth of silky cocoa flavor.
You can do this 2 ways: one with protein powder and one without. I give the notes below the recipe but I place the differences here as well. If you are using protein powder, you will add a total of 3 tablespoons of oil(versus the 2) because the protein powder will naturally dry out the mixture. The recipe stays as is except for the oil (3 tbsp) and the addition of protein (2 tbsp). The remaining ingredients you follow as written. What you see in the picture is my using protein powder. You do not have to use protein powder….
You follow the recipe as is and use any chocolate chips you want. If you don’t like sea salt then add a dash of table salt to the mixture before you pop it in the oven. No big deal!
My intentions were to add a scoop of ice credam but clearly it didn’t need it! You can get creative and add caramel chips, mint chips, peanut butter M&M’s, Heath Bar, anything you want in this mix!

Ingredients
- 1 egg yolk
- 2 tablespoons vegetable oil*
- 1 tablespoon milk (any)
- 2 tablespoons brown sugar, loosely packed
- 2 tablespoons unsweetened cocoa powder
- Dash vanilla extract
- 1 tablespoon flour**
- 1/4 teaspoon baking powder
- Chocolate chips
- Sea Salt
Directions
- Pre-heat oven to 350 degrees F. Grease small ramekin, set aside.
- In a small bowl, mix together egg, oil, milk, sugar, cocoa powder, vanilla, flour, and baking powder together using a spatula until everything is well combined.
- Scoop into prepared dish, top with chocolate chips if using. Bake 17 minutes.
- Remove and allow to set for 5-6 minutes. Top with sea salt and enjoy!
- It has been noted that 2 minutes in the microwave does the trick, too!

*For the oil, if you want to add 2 tablespoons protein powder in this recipe add 3 tablespoons oil versus 2. Everything else will remain the same!
**I use Bob’s Red Mill Gluten-Free 1:1 Baking Flour, you can use all-purpose or whole wheat, measurements stay the same either way!

These were delicious and so easy to prepare. Unfortunately I baked them a little too long so they were on the dry side. My husband advised me to keep trying till I get it right đ. I added toasted Pecan pieces and caramel bites in addition to the chocolate chips. The Sea Salt really made the taste pop.
