Your 3 o’clock coffee date just got better!

Pack a punch of caffeine in your next treat with Sunday snack prep for the week loaded with coffee and natural ingredients.

I always hit my wall around 2:30-3 p.m. and looking for a snack or coffee. This is the perfect DATE to perk you up PLUS covered in chocolate. OR do yourself a quick favor in the mornings and take your coffee to go!

You can use vanilla protein powder in place of coffee flavor protein as well as skip the collagen and add more protein in place. The coffee flavor can also be heightened using a dash of instant espresso powder into the melted chocolate before you roll the frozen balls into the mixture.

I bet you can’t just have one!

Cafe Latte Energy Balls

  • Servings: 7-8

Ingredients

  • 15 large dates, pitted
  • 1 scoop coffee flavored protein powder
  • 3/4 scoop collagen powder
  • 1/4 cup oats
  • 1 1/2 tablespoons brewed coffee
  • 1/2 vanilla bean, scrapped*
  • 1/2 cup dark chocolate, chopped

Directions

  1. In a food processor, process dates, protein powder, collagen, oats, coffee, and vanilla bean together until a ball forms.
  2. Roll into 1 inch balls, place in freezer for 30 minutes.
  3. Line a storage container with parchment, set aside.
  4. In a small sauce, fill with water 1/4-in deep. Place on stove over high heat until it comes to a boil. Reduce to medium low/low.
  5. Place a large bowl on top to create a double boiler, add chocolate and pack your patience. Wait until chocolate is melted, remove balls from the freezer and place one at a time into the melted chocolate. Cover all sides then place on parchment (I use 2 forks for this).
  6. Repeat until finished. Place in fridge for 20 minutes.
  7. Ready to eat or store in air tight container in refrigerator.
