Protein Muffins

It is spring cleaning early in my kitchen. My pantry, fridge, and freezer are all getting a make over and I am using the last bit of items to create easy recipes with simple ingredients.

This is a dense muffin because it has no flour! I love them, totally feel less guilty eating 5 of these knowing the featured ingredient is protein powder.

I always have vanilla in stock in my pantry and it comes in handy! This will be one of many upcoming recipes using Isopure protein mix. You can use any powder you want, really.

Swerve is a powder sugar and brown sugar substitute for the health nut world, if you do not have these or care for them use your favorite brown sugar and powder sugar brands.

I have listed some notes below the recipe for simple swaps. You do not need an egg white in this mix, but it will help fluffy these mini bread bites rise a tad bit.

Protein Muffins

Ingredients

For the muffins:

  • 2 scoop vanilla protein powder
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 tablespoon ground cinnamon
  • 1/4 teaspoon nut meg
  • 1/4 teaspoon all-spice
  • 1/2 cup nut butter (any)
  • 1 cup applesauce*
  • 3 teaspoons pure maple syrup**
  • 1/2 cup swerve brown sugar (optional)
  • 1 egg white, beaten (optional)
  • 1/4 cup berries (optional)
  • 1/4 cup nuts (optional)

For the drizzle:

  1. 1 cup swerve powdered sugar
  2. 2-3 tablespoons maple syrup (or honey/agave)

Directions

  1. Pre-heat oven to 350 degree F. Grease muffin pan.
  2. In a standing mixer or using a hand beater/whisk, whisk together protein powder, flour, baking powder, cinnamon, nut meg, all-spice.
  3. Add nut butter, applesauce, brown sugar.
  4. Add egg white and any mix-in’s.
  5. Spoon mixture evenly among 9 muffin cups.
  6. Bake 13-15 minutes.

For the toppings:

  1. Mix sugar and syrup together until as thin as you like. For thinner drizzle add more syrup, for less, add more swerve.

Assembly:

  1. After removing muffins from oven, immediately poke a few holes on top using a tooth pick.
  2. Remove muffins from tin on to a platter, drizzle glaze over the top. Let sit 5 minutes to allow the glaze to soak into the bread.

*Substitute 1/2 cup mashed banana or sweet potato for 1/2 cup applesauce. OR 1/2 cup coconut oil for 1/2 cup applesauce

**Optional here to add the syrup, the brown sugar will help take care of the sweetness, but if you do not have the brown sugar add in the syrup for sure. Honey or agave can be used in place.
