Healthy Chicken Fajitas

A healthy chicken recipe that features a fajita flavor in the oven!

I tossed out the tortilla for this recipe but you are welcome to grab some off the shelf! I had an abundance of pasta this week so I kept it on the lighter side for this recipe.

I actually did not miss the tortilla here, the crunch of the lettuce helped aid the flavor bomb of the meat and highlighted the toppings. I used Zubiate crema and salsa from Zubiate foods in Dallas, Tx. Literally I put these items on everything. They are sooo good!!

You can use this same recipe with flank steak. I read if you put the broiler on the last 3 minutes of the cooking time you get that char just like the restaurants! I wouldn’t recommend doing that with chicken!

During the summer months, grill each side 7 minutes. A fun way to get the family out doors or a great way to throw an outdoor summer party. Lay out the toppings and create a fajita bar!

Healthy Chicken Fajitas

Ingredients

For the chicken:

  • 2 chicken breast, sliced thin
  • 2 tablespoons olive oil
  • 1 small lime, juiced
  • 1 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Dash of salt

For the peppers:

  • 3 large peppers, sliced thin
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • Dash of dried oregano
  • Pinch of salt
  • Pinch of pepper

Toppings:

  • Avocado
  • Cilantro
  • Crema
  • Sliced Jalapenos
  • Salsa
  • Sour cream
  • Tortilla strips

Directions

For the chicken:

  1. In a large bowl, combine olive oil, lime juice, chili powder, garlic powder, cumin, salt and pepper. Toss the chicken into marinade. Refrigerate 15 minutes.

For the peppers:

  1. In the mean time, in a medium bowl, add oil, garlic powder, oregano, salt, and pepper. Toss in peppers.
  2. Coat peppers and let sit while chicken is marinating.
  3. Pre-heat oven to 425 degrees F. Cut four 12×12 pieces of foil.
  4. Remove the chicken from the refrigerator. Appropriate portion peppers among the 4 pieces of foil. Then the chicken. Discard any juices at the bottom of the bowl.
  5. Bring the edges on all four sides of each piece together, sealing the ingredients.
  6. Place on baking sheet. Bake 15 minutes.
  7. Remove from oven, let sit 2 minutes.
  8. Carefully unwrap foil. Serve on tortilla or lettuce leaf. Top with favorite goodies!
