These are packed with protein, fiber, and an abundance of flavor! A easy grab and go breakfast that is quick to make and pack!
Cherry Almond Coconut Energy Balls
Ingredients
- 1/4 cup raw almonds
- 3/4 cup shredded coconut*
- 14 dates
- 1/2 cup dried cherries
- 1/8 teaspoon almond extract
- 3 tablespoon water
- 1 1/2 cup almond meal**
Directions
- Rough chop almond into pieces in food processor. Set aside.
- Grind the shredded coconut in the food process. You want tiny bits, as seen in photo. Set aside in medium bowl.
- Add dates, cherries, almond extract, and water in processor. Grind until just smooth.
- Place mixture into bowl, add almond meal and chopped almonds.
- Roll into 1-1/2-inch balls (medium size) then roll into shredded coconut.
- Chill or eat right away!
*I used sweetened shredded coconut and then grind it. Use whatever coconut flakes you like!
**Almond meal is just finely ground almonds. If you have an abundance of them grind in the processor until you have about 1 1/2 cups.
*CHOCOLATE CHIPS makes everything better. Fold in chopped chocolate or mini chips for extra fun!
