Cherry Topping

Anything with a cherry on top is the right way to start the day, or end the day!

This mixture is liquidity versus thick so you are left with more cherries and flavor versus a jam type. This mixture features sweet cherries soaked in a vibrant, fresh orange juice flavor sweetened with sugar to help brighten the cherry flavor.

I love this topping because it goes really well on almond butter toast drizzled with hazelnut spread for a hearty breakfast covering all the breakfast essentials. Anti-oxidants, protein, sugars to break the sleeping cycle, and 7 grain toast. Great, too over yogurt, oatmeal, and for the late night sweet tooth…ice-cream!

This is also a great topping for your cheese party tray. Goes very well with soft and hard cheese drizzled with extra honey.

The almond extract you can use, otherwise noted it is options. Cherries and almond pair well together, a little goes a long way!

Cherry Compote Topping

  • Servings: 1.5-2cups

Ingredients

  • 2 cups fresh or frozen cherries, pitted and halved
  • 2 tablespoons sugar*
  • 2 tablespoons fresh squeezed orange juice
  • 1/2 tablespoon honey or agave
  • Dash almond extract (optional)

Directions

  1. In a sauce pan over medium heat, add cherries, sugar, juice.
  2. Occasionally stir watching the juices release from the cherries, softening the fruit. About 5-6 minutes.
  3. Bring to a rapid simmer. Using a slotted spoon remove the cherries and set aside.
  4. Allow juice to continue to thicken over medium heat. Another 2-3 minutes. Stirring frequently.
  5. Add in honey or agave. Continue to stir.
  6. Place cherries back in pot, heat for another 1-2 minutes.
  7. Remove mixture. Add extract, toss to mix.
  8. Pour cherry mixture into bowl and chill for 5-10 minutes, uncovered.
  9. Top over oatmeal, toast, ice cream, yogurt, cottage cheese, etc.

*Granulated, coconut, pure cane, organic, any sugar works here.
