Ultimate Mint Chocolate Chip Cookie

Bakery style cookies with a surprise middle! I love mint but sometimes it can over power a dessert if the flavor is too strong. Not the case with these yummy, soft, chewy cookies. 

I have tried different mint candies and I must come back to the Ghirardelli squares because they are a hint of mint flavor without loosing the taste of the cookie. I love cookies right out the the oven, and when you break in half the warm cookie a molten center of chocolate and mint being to melt out. It is down right naughty! 

If you do not like the dark chocolate, find milk. If mint isn’t your thing, this dough is tasty by itself. To impress your next party, hide the heavenly chocolate squares in the center of the cookie or for a beautiful presentation, melt on top. OR double up, one in the center and one on top! What? There are no rules in my kitchen!

Ultimate Mint Chocolate Chip Cookie

Who doesn’t love a surprise middle? Tasty inside and out, the mint is irresistible!

Ingredients

Directions

  1. Prepare cookie dough according to directions.
  2. Pre-heat oven to 325 degrees F. Line baking sheet with parchment paper
  3. Unwrap chocolate squares carefully. Set aside.
  4. Take 1 tablespoon full chilled cookie dough, flatten out to make the base of the cookie. 
  5. Place square in the center, begin to wrap up the dough up and around the sides of the square.
  6. Scoop another half tablespoon and place on top of the square and crimp edges together to seal the dough over the square. Place on baking sheet.
  7. Repeat 5 more times.
  8. Bake 14-15 minutes. Remove from oven and let cookies rest on baking sheet for 1-2 minutes. This is will help the cookie continue to cook without over baking.
  9. Transfer to cooling rack. 
  10. Enjoy warm or room temperature.

If you have room after your first batch, add 2 more cookies to your baking sheet, each batch will have 8 instead of 6 cookies. You want the cookies to have space to spread without overcrowding the pan.

If you prefer not to stuff these, as pictured, place chocolate square in the center of the cookie right out of the oven and lightly press down.
