Roasted Veggies
Ingredients
- 1/2 pound whole carrots, peeled and halved*
- 1 medium sweet potato, sliced in discs, then quartered
- 1 medium purple potato, sliced in discs, then quartered
- 2-3 tablespoons olive oil
- 1-2 tablespoons honey (optional)*
- 1/4 teaspoon Lawry’s seasoned salt
- Dash of rosemary
- Dash of thyme
Directions
- Pre-heat oven to 425 degrees F.
- Brush carrots with olive oil to coat.
- Toss potatoes with the rest of the oil, add honey, seasoned salt, and herbs.
- Place in 9×13 baking dish or prepared baking sheet lines with parchment. Bake 30-35 minutes.
- Carrots should be fork tender.
- Remove, add additional drizzle of honey. Let sit for a few minutes.
- Serve warm.
*As seen in the photo, the thickness of my carrots are pretty small. If your carrots are thick on the end you will want to cut in half vertically so everything roasts at the same time.
**Maple syrup instead of honey is a good option, as well as agave syrup.
