Take your salad for a flavorful and colorful ride with simple whole ingredients. Inspired by the famous Greek salad, a savory side salad to accompany your meal…or grab the pita chips and hummus and it’s a meal! Pair with my 15-Minute Herb Salmon recipe for a quick, healthy week night meal!
Healthy Greek Salad
Ingredients
- 2 whole cucumbers
- 1 carton cherry ripe tomatoes
- 1 jar pitted Mix or Kalamata olives
- 1 jar capers
- Fresh parsley
- Fresh dill
- Feta cheese
Directions
- Cut cucumber length wise and horizontally. Place in large bowl.
- Cut tomatoes in half. Add to bowl.
- Chop olives in halves, about half jar. Add to bowl with tablespoon of juice.
- Add half jar of capers with tablespoon of juice.
- Roughly add 1/4 cup parsley and 1/4 cup separated dill.
- Add 3/4 cup feta cheese.
- Toss to coat. Cover with plastic wrap, chill in refrigerator for 30 minutes. Serve cold.
Add amounts appropriate to you, there is no wrong way to make this!
Add artichokes and red onion if desired.
